Abstract

Fishes serve quality oil, proteins, minerals, and vitamins, therefore, people have it as a supplementary diet from ancient time. The protein, carbohydrate, and lipid contents were estimated from three spices of mudskippers (Periopthalmus waltoni, Boleophthalmus dussumeiri and Scartelaos histophorus) from Bhavnagar coast, Gujarat, India. For the estimation of nutrients, muscles and liver were used. The maximum levels of nutrient estimated in the liver of B. dussumeiri and minimum from muscles of the S. histophorus. From all the three spices of mudskippers, the B. dussumeiri is rich in nutrient content and liver is the main source of these nutrients in mudskippers. Due to the high content of carbohydrate, protein and lipid the Mudskipper B. dussumeiri is widely consumed by the local people and so the fished by fishermen.
